- 4 cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine chopped rhubarb, granulated sugar, cornstarch, and lemon juice. Toss until the rhubarb is well coated.
- Spread the rhubarb mixture evenly in a greased 9×13 inch baking dish.
- In a separate bowl, mix together rolled oats, flour, brown sugar, and cinnamon.
- Pour the melted butter into the oat mixture and stir until combined.
- Spread the crumble topping evenly over the rhubarb in the baking dish.
- Bake for 30-35 minutes, or until the topping is golden brown and the rhubarb is bubbly.
- Let cool for a few minutes before serving. Enjoy warm with ice cream or whipped cream!
