Ingredients

  • 4 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine chopped rhubarb, granulated sugar, cornstarch, and lemon juice. Toss until the rhubarb is well coated.
  3. Spread the rhubarb mixture evenly in a greased 9×13 inch baking dish.
  4. In a separate bowl, mix together rolled oats, flour, brown sugar, and cinnamon.
  5. Pour the melted butter into the oat mixture and stir until combined.
  6. Spread the crumble topping evenly over the rhubarb in the baking dish.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the rhubarb is bubbly.
  8. Let cool for a few minutes before serving. Enjoy warm with ice cream or whipped cream!
