Ingredients

  • 8 slices of rye bread
  • 1 pound corned beef, sliced
  • 1 cup sauerkraut, drained
  • 8 slices Swiss cheese
  • 1/2 cup Russian or Thousand Island dressing
  • 4 tablespoons butter, softened

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread butter on one side of each slice of rye bread.
  3. On the unbuttered side of 4 slices, layer corned beef, sauerkraut, Swiss cheese, and dressing.
  4. Top with the remaining slices of bread, buttered side up.
  5. Place the sandwiches in the skillet and grill until golden brown, about 4-5 minutes per side, pressing down gently.
  6. Once both sides are golden and the cheese has melted, remove from heat.
  7. Cut in half and serve warm.

Notes

  • For extra flavor, add pickles or a sprinkle of caraway seeds.
  • If you prefer a lighter option, use whole grain bread instead of rye.
