Description
A classic Reuben sandwich with layers of corned beef, sauerkraut, Swiss cheese, and Russian or Thousand Island dressing, grilled to perfection.
Ingredients

- 8 slices of rye bread
- 1 pound corned beef, sliced
- 1 cup sauerkraut, drained
- 8 slices Swiss cheese
- 1/2 cup Russian or Thousand Island dressing
- 4 tablespoons butter, softened
Instructions
- Preheat a skillet or griddle over medium heat.
- Spread butter on one side of each slice of rye bread.
- On the unbuttered side of 4 slices, layer corned beef, sauerkraut, Swiss cheese, and dressing.
- Top with the remaining slices of bread, buttered side up.
- Place the sandwiches in the skillet and grill until golden brown, about 4-5 minutes per side, pressing down gently.
- Once both sides are golden and the cheese has melted, remove from heat.
- Cut in half and serve warm.
Notes
- For extra flavor, add pickles or a sprinkle of caraway seeds.
- If you prefer a lighter option, use whole grain bread instead of rye.
