Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch baking pan.
- In a large bowl, mix together the grated zucchini, granulated sugar, brown sugar, and vegetable oil.
- Add the eggs, lemon juice, and lemon zest to the mixture and stir until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
- While the bars are baking, prepare the cream cheese frosting by beating the cream cheese and butter together until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Once the bars are cool, spread the cream cheese frosting over the top.
- Cut into squares and serve.
