Ingredients

  • 2 cups water

  • 1 cup cherry tomatoes, halved

  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine quinoa, olive oil, tomatoes, cucumber, bell pepper, and parsley.
  6. Drizzle with lemon juice and season with salt and pepper.
  7. Toss everything together and serve.
