Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a bowl, mix olive oil and lemon juice.
- Add chopped vegetables to the quinoa.
- Pour dressing over the quinoa and vegetables.
- Toss to combine.
- Season with salt and pepper.
- Garnish with parsley before serving.

- Store leftovers in an airtight container.
- Can be served warm or chilled.
