- 1 lb ground beef
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 package taco seasoning
- 4 cups beef broth
- 1 cup chopped onion
- 1 cup chopped bell pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and bell pepper, cooking until soft.
- Add ground beef and cook until browned.
- Stir in taco seasoning, black beans, corn, diced tomatoes, and beef broth.
- Bring soup to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot, garnished with your favorite toppings.
Notes
- Can be made in a slow cooker for added flavor.
- Adjust spice level by adding jalapeños.
- Store leftovers in the refrigerator for up to 3 days.
