Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 1 packet ranch seasoning mix
- 1 cup chicken broth
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1/2 tsp chili powder
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
Instructions
- Place chicken, ranch seasoning, chicken broth, garlic powder, onion powder, cumin, and chili powder in the Instant Pot.
- Close the lid and set to high pressure for 10 minutes.
- Once done, quick-release the pressure and shred the chicken.
- Warm the tortillas.
- Fill each tortilla with shredded chicken, lettuce, tomatoes, cheese, and sour cream.
- Serve immediately.
Notes
- Use leftover chicken for meal prep.
- Substitute Greek yogurt for sour cream for a healthier option.
