Description

A healthy and nutritious quinoa veggie salad packed with fresh vegetables and protein-rich quinoa.


Ingredients

  • 1 cup quinoa (uncooked)
  • 2 cups water
  • 1 cucumber (diced)
  • 1 red bell pepper (diced)
  • 1 carrot (grated)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and drain.
  2. In a saucepan, bring water to a boil, add quinoa, reduce heat, and simmer for 15 minutes.
  3. Remove from heat, fluff with a fork, and let cool.
  4. In a large bowl, combine cooked quinoa, cucumber, bell pepper, carrot, red onion, and parsley.
  5. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  6. Toss well and serve chilled.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Add avocado or feta cheese for extra flavor.
