- 2 boneless, skinless chicken breasts, diced
- 1/4 cup sweet chili sauce
- 1 tbsp soy sauce
- 1 tbsp vegetable oil
- 1 cup cooked rice
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumber
- 1/4 cup chopped green onions
- 1 tbsp sesame seeds
Instructions
- Heat oil in a pan over medium heat.
- Add diced chicken and cook until no longer pink, about 6-8 minutes.
- Stir in sweet chili sauce and soy sauce, coating the chicken evenly.
- Cook for another 2 minutes until the sauce thickens.
- Serve over rice and top with carrots, cucumber, green onions, and sesame seeds.
Notes
- Swap chicken for tofu for a vegetarian option.
- Adjust spice level by adding more or less chili sauce.
