Ingredients

- 8 oz pasta (any type)
- 2 salmon fillets (6 oz each)
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
- Season salmon with salt and black pepper. Add to the pan and cook for 4 minutes per side.
- Remove salmon from the pan and flake into pieces.
- Add spinach to the pan and cook until wilted, about 2 minutes.
- Combine pasta, salmon, and spinach in the pan. Toss gently.
- Sprinkle with Parmesan cheese and red pepper flakes (if using). Serve warm.
Notes
- Use fresh salmon for best results.
- Substitute spinach with kale if preferred.
- Add lemon zest for extra flavor.
