This quick Mediterranean chicken bowl is packed with flavor and can be made in just 30 minutes. Perfect for a healthy weeknight dinner!

- 2 cups cooked quinoa
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and halved
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, garlic powder, oregano, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- While the chicken is cooking, prepare the vegetables. In a bowl, combine cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- Once the chicken is done, remove it from the heat and let it rest for a couple of minutes.
- To assemble the bowls, add a base of quinoa to each bowl. Top with the cooked chicken and the vegetable mixture.
- Garnish with fresh parsley and serve with lemon wedges on the side.
Notes
- You can substitute chicken with shrimp or chickpeas for a vegetarian option.
- Feel free to add other vegetables like bell peppers or spinach based on your preference.
