  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/3 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
  2. Whisk flour, baking soda, salt, and pumpkin pie spice in a bowl.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time.
  4. Mix in pumpkin puree, milk, and vanilla.
  5. Fold in dry ingredients until just combined.
  6. Pour batter into the loaf pan and bake for 50-60 minutes.
  7. Let cool before slicing.
