Ingredients

  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix pumpkin puree, granulated sugar, brown sugar, melted butter, egg, and vanilla.
  3. In another bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until combined.
  5. Drop spoonfuls of dough onto the baking sheet, spacing them apart.
  6. Bake for 10-12 minutes or until edges are lightly golden.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
