Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the pumpkin puree, sugar, brown sugar, vegetable oil, and eggs.
- In another bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
- Spoon the batter into a lined muffin tin, filling each cup about 2/3 full.
- Add a dollop of cream cheese to the center of each muffin cup.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and allow to cool on a wire rack.
