A delicious and easy pumpkin French toast casserole, perfect for breakfast or brunch. Baked with warm spices and a custard-like texture.

- 6 cups cubed bread
- 4 eggs
- 1 cup milk
- 1 cup pumpkin puree
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp cloves
- 2 tbsp butter (for greasing)
Instructions
- Preheat oven to 350°F (175°C). Grease a baking dish with butter.
- Spread bread cubes evenly in the dish.
- In a bowl, whisk eggs, milk, pumpkin puree, brown sugar, vanilla, cinnamon, nutmeg, ginger, and cloves.
- Pour mixture over the bread, pressing lightly to soak.
- Bake for 45-50 minutes until set and golden.
- Let cool for 5 minutes before serving.
Notes
- Use stale bread for better absorption.
- Top with maple syrup or whipped cream.
- Can be assembled the night before and baked in the morning.
