Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the pumpkin puree, sugar, eggs, and vegetable oil.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- In a separate bowl, beat the cream cheese until smooth.
- Fill muffin tins with batter, then add a dollop of cream cheese mixture on top of each muffin.
- Use a toothpick to swirl the cream cheese into the batter slightly.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
- Cool completely before serving.
