- 1 cup pumpkin puree
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix pumpkin puree, eggs, oil, and vanilla.
- In another bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine wet and dry ingredients until just mixed.
- In a separate bowl, beat cream cheese and sugars until smooth.
- Pour half the pumpkin batter into the loaf pan. Spread cream cheese mixture over it.
- Top with remaining pumpkin batter. Swirl lightly with a knife.
- Bake for 50-60 minutes until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Use room-temperature cream cheese for smooth mixing.
- Do not overmix the batter to avoid a dense texture.
- Store leftovers in an airtight container for up to 3 days.
