Ingredients

- 1 cup all-purpose flour
- 1 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/2 tsp salt
- 3/4 cup milk
- 1/2 cup pumpkin puree
- 1 large egg
- 2 tbsp melted butter
- 1/2 cup chocolate chips
Instructions
- Whisk flour, sugar, baking powder, cinnamon, nutmeg, ginger, and salt in a bowl.
- In another bowl, mix milk, pumpkin puree, egg, and melted butter.
- Combine wet and dry ingredients. Stir just until mixed.
- Fold in chocolate chips.
- Heat a griddle over medium heat and lightly grease it.
- Pour 1/4 cup batter for each pancake. Cook until bubbles form, then flip and cook until golden.
Notes
- Use canned pumpkin puree, not pumpkin pie filling.
- Do not overmix the batter to keep pancakes fluffy.
- Adjust heat as needed to prevent burning.
