- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup pumpkin puree
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon clove
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter.
- Press the mixture into the bottom of a greased 9×13 inch baking dish to form the crust.
- In another bowl, beat the cream cheese until smooth.
- Add pumpkin puree, sugar, eggs, vanilla extract, cinnamon, nutmeg, clove, and salt to the cream cheese.
- Mix until well combined and smooth.
- Pour the pumpkin mixture over the crust in the baking dish.
- Bake in the preheated oven for 45 minutes or until the center is set.
- Remove from the oven and allow to cool at room temperature.
- Chill in the refrigerator for at least four hours before cutting into bars.
- Serve chilled or at room temperature, optionally topped with whipped cream.
