Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/4 cup water
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In another bowl, mix pumpkin puree, oil, granulated sugar, brown sugar, eggs, and water.
  4. Combine wet and dry ingredients, stirring until just mixed. Fold in chocolate chips.
  5. Pour batter into the loaf pan and bake for 60-70 minutes, or until a toothpick comes out clean.
  6. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use canned pumpkin puree, not pumpkin pie filling.
  • For extra richness, add 1/2 cup chopped nuts.
  • Store in an airtight container for up to 3 days.
