Ingredients
Scale
- 1 cup of coconut milk
- 1 cup of sugar
- 1 cup of cornstarch
- 2 cups of water
- 1 teaspoon of vanilla extract
- 1/2 cup of raisins
- 1/2 teaspoon of cinnamon
Instructions
- In a pot, mix water and sugar over medium heat until the sugar dissolves.
- Add coconut milk and vanilla extract, stirring well.
- In a separate bowl, dissolve cornstarch in a bit of water.
- Slowly pour the cornstarch mixture into the pot, stirring continuously.
- Add raisins and cinnamon, then cook for about 10 minutes until thickened.
- Pour the mixture into a mold and let it cool.
- Refrigerate for at least 2 hours before serving.
Notes
- This dessert is best served chilled.
- You can substitute coconut milk with almond milk for a different flavor.
- Feel free to add nuts for extra texture.
