- 4 medium potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped chives or green onions for garnish (optional)
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender in batches to blend until smooth.
- Stir in the heavy cream and season with salt and pepper to taste. Heat through.
- Serve hot, garnished with chopped chives or green onions if desired.
Notes
- For a thicker soup, you can add more potatoes or reduce the amount of broth.
- Feel free to add cooked bacon or ham for extra flavor.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
