Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped chives or green onions for garnish (optional)

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender in batches to blend until smooth.
  5. Stir in the heavy cream and season with salt and pepper to taste. Heat through.
  6. Serve hot, garnished with chopped chives or green onions if desired.

Notes

  • For a thicker soup, you can add more potatoes or reduce the amount of broth.
  • Feel free to add cooked bacon or ham for extra flavor.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
