- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- Fresh chives for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic. Sauté until soft.
- Add diced potatoes and vegetable broth.
- Bring to a boil, then reduce heat. Simmer until potatoes are tender.
- Blend the mixture until smooth.
- Stir in heavy cream, salt, and pepper.
- Serve hot, garnished with fresh chives.
Notes
- For a vegan option, replace heavy cream with coconut milk.
- You can add Beef Bacon for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
