This classic potato salad is creamy, tangy, and packed with flavor. It’s the perfect side dish for barbecues, picnics, or any gathering.


Ingredients

  • 2 pounds of potatoes (Yukon Gold or red potatoes are recommended)
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup celery, finely chopped
  • 1/2 cup red onion, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Wash and peel the potatoes (if desired). Cut them into bite-sized pieces and place them in a large pot of salted water.
  2. Bring the water to a boil and cook the potatoes until fork-tender, about 10-15 minutes. Drain and let cool.
  3. In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Mix well.
  4. Once the potatoes are cool, add them to the bowl with the dressing, along with celery, red onion, chopped eggs, and parsley. Gently mix until everything is well coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving to allow the flavors to meld.

Notes

  • Feel free to add other ingredients like chopped pickles, relish, or bell peppers for extra flavor.
  • This potato salad can be made a day in advance for convenience.
