This classic potato salad is creamy, tangy, and packed with flavor. It’s the perfect side dish for barbecues, picnics, or any gathering.
Ingredients

- 2 pounds of potatoes (Yukon Gold or red potatoes are recommended)
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup celery, finely chopped
- 1/2 cup red onion, finely chopped
- 2 hard-boiled eggs, chopped
- 1/4 cup fresh parsley, chopped
Instructions
- Wash and peel the potatoes (if desired). Cut them into bite-sized pieces and place them in a large pot of salted water.
- Bring the water to a boil and cook the potatoes until fork-tender, about 10-15 minutes. Drain and let cool.
- In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Mix well.
- Once the potatoes are cool, add them to the bowl with the dressing, along with celery, red onion, chopped eggs, and parsley. Gently mix until everything is well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving to allow the flavors to meld.
Notes
- Feel free to add other ingredients like chopped pickles, relish, or bell peppers for extra flavor.
- This potato salad can be made a day in advance for convenience.
