Description
A quick and easy potato chicken dish made in an Instant Pot. Perfect for busy weeknights.
Ingredients

- 1 lb chicken breast, cubed
- 2 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tbsp olive oil
Instructions
- Turn on the Instant Pot and select the sauté function. Heat olive oil.
- Add onions and garlic, sauté for 2 minutes until fragrant.
- Add chicken cubes and cook until lightly browned.
- Add potatoes, chicken broth, salt, pepper, and paprika. Stir well.
- Close the lid and set the Instant Pot to high pressure for 8 minutes.
- Quick release the pressure once done. Serve hot.
Notes
- You can use chicken thighs instead of breast for more flavor.
- Add carrots or peas for extra vegetables.
