- 4 large potatoes, diced
- 1 onion, chopped
- 2 cups chicken broth
- 1 cup milk
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add chopped onion and sauté until soft.
- Add diced potatoes and chicken broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Blend the soup with an immersion blender until smooth.
- Stir in milk, cheese, and sour cream. Mix well.
- Season with salt and pepper.
- Serve hot.
Notes
- Use any type of cheese you prefer.
- For a thicker soup, add more potatoes.
- Top with green onions or bacon bits if desired.
