A creamy and hearty potato cheese soup that warms you up.
Ingredients

- 4 cups potatoes, diced
- 1 cup cheddar cheese, shredded
- 1 onion, chopped
- 2 cups chicken broth
- 1 cup milk
- 1/2 cup sour cream
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- Melt butter in a pot over medium heat.
- Add chopped onion and sauté until translucent.
- Add diced potatoes and chicken broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in milk, sour cream, and shredded cheese.
- Season with salt and pepper.
- Cook until cheese is melted and soup is heated through.
- Serve hot.
Notes
- For a thicker soup, blend some of the potatoes.
- Top with additional cheese or green onions if desired.
- Store leftovers in the refrigerator for up to three days.
