Description
This is a creamy potato and broccoli soup packed with flavor and nutrients.
Ingredients

- 4 medium potatoes, peeled and diced
- 2 cups broccoli florets
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk or almond milk
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and minced garlic, sauté until soft.
- Add diced potatoes and vegetable broth, bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add broccoli and cook for another 10 minutes.
- Blend the soup until smooth.
- Stir in milk and season with salt and pepper.
- Serve warm.
Notes
- Adjust the thickness by adding more or less broth.
- For a vegan version, use almond milk.
- Garnish with croutons or herbs if desired.
