Ingredients

  • 4 cups vegetable broth
  • 1 cup milk or almond milk

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until soft.
  3. Add diced potatoes and vegetable broth, bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Add broccoli and cook for another 10 minutes.
  6. Blend the soup until smooth.
  7. Stir in milk and season with salt and pepper.
