Ingredients

- 4 cups chopped broccoli
- 2 cups diced potatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add diced potatoes and vegetable broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Add broccoli and cook until tender, about 5 minutes.
- Blend the soup until smooth.
- Stir in milk, and season with salt and pepper.
- Serve hot.

- Adjust consistency by adding more broth if needed.
- For a vegan option, use plant-based milk.
- Garnish with croutons or cheese if desired.
