- 4 bone-in pork chops, about 1 inch thick
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh rosemary, chopped
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 400°F (200°C).
- Season both sides of the pork chops with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the pork chops.
- Sear the pork chops for about 3-4 minutes on each side, until they are golden brown.
- Add butter, garlic, thyme, and rosemary to the skillet. Cook for an additional minute, basting the pork chops with the melted butter.
- Pour in the chicken broth, Dijon mustard, and lemon juice. Bring to a simmer.
- Transfer the skillet to the oven and bake for 10-15 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).
- Remove from the oven and let rest for 5 minutes before serving.
