  • 4 bone-in pork chops, about 1 inch thick
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season both sides of the pork chops with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the pork chops.
  4. Sear the pork chops for about 3-4 minutes on each side, until they are golden brown.
  5. Add butter, garlic, thyme, and rosemary to the skillet. Cook for an additional minute, basting the pork chops with the melted butter.
  6. Pour in the chicken broth, Dijon mustard, and lemon juice. Bring to a simmer.
  7. Transfer the skillet to the oven and bake for 10-15 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).
  8. Remove from the oven and let rest for 5 minutes before serving.
