Description

These pistachio snowball cookies are soft, buttery treats rolled in powdered sugar.


Ingredients

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup finely chopped pistachios
  • 1/4 teaspoon salt
  • additional powdered sugar for coating

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter and powdered sugar together.
  3. Add the vanilla extract and mix well.
  4. Gradually add the flour, chopped pistachios, and salt. Mix until combined.
  5. Form the dough into small balls, about 1 inch in diameter.
  6. Place the balls on a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the bottoms are lightly golden.
  8. Remove from oven and let cool slightly.
  9. Roll the warm cookies in powdered sugar.
  10. Allow to cool completely on a wire rack.
