Ingredients

  • 1 pound beef tenderloin, cut into bite-sized pieces
  • 1 cup shelled pistachios, finely chopped
  • 1/2 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix chopped pistachios, breadcrumbs, salt, and pepper in a shallow bowl.
  3. Coat beef pieces in flour, dip in beaten eggs, then press into pistachio mixture.
  4. Place on a baking sheet and bake for 12-15 minutes, flipping halfway.
  5. Melt butter in a small pan over low heat, add garlic, and cook until fragrant.
  6. Stir in parsley and serve garlic butter as a dipping sauce.
