- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 1 can (20 oz) pineapple slices
- 10 maraschino cherries
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat oven to 350°F (175°C).
- Melt butter in a 9-inch round cake pan.
- Sprinkle brown sugar evenly over melted butter.
- Arrange pineapple slices on top and place cherries in the centers.
- In a bowl, whisk flour, baking powder, and salt.
- In another bowl, beat granulated sugar, egg, and vanilla until smooth.
- Alternately add flour mixture and milk to the sugar mixture, mixing well.
- Pour batter over pineapple in the pan.
- Bake for 40-45 minutes or until a toothpick comes out clean.
- Cool for 5 minutes, then invert onto a serving plate.
Notes
- Use fresh pineapple for a brighter flavor.
- Let the cake cool slightly before inverting to prevent crumbling.
- Serve warm with whipped cream or ice cream.
