Ingredients

  • 1/2 cup brown sugar
  • 1 can (20 oz) pineapple slices
  • 10 maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Pour melted butter into a 9-inch round cake pan.
  3. Sprinkle brown sugar evenly over butter.
  4. Arrange pineapple slices on sugar mixture. Place cherries in center of slices.
  5. Mix flour, granulated sugar, baking powder, and salt in a bowl.
  6. Add milk, oil, egg, and vanilla. Stir until smooth.
  7. Pour batter over pineapple in pan.
  8. Bake 40-45 minutes until golden brown.
  9. Cool 5 minutes, then invert onto serving plate.
