A simple and delicious recipe for grilled pineapple chicken kabobs, perfect for a summer dinner.

- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 2 cups fresh pineapple chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp black pepper
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- In a bowl, mix soy sauce, honey, olive oil, garlic powder, and black pepper to make the marinade.
- Add chicken cubes to the marinade, coat well, and refrigerate for at least 30 minutes.
- Preheat grill to medium-high heat.
- Thread chicken, pineapple, bell peppers, and onion onto skewers, alternating ingredients.
- Grill kabobs for 10-12 minutes, turning occasionally, until chicken is fully cooked.
- Serve hot.
Notes
- You can use canned pineapple if fresh is not available.
- Adjust grilling time based on the size of your chicken pieces.
- Serve with rice or a side salad for a complete meal.
