Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1/2 cup fresh basil pesto
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup pine nuts (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat.
  3. Add diced chicken, garlic, salt, and pepper. Cook until chicken is no longer pink (about 6-8 minutes).
  4. Add cooked pasta and pesto to the pan. Toss to combine.
  5. Stir in Parmesan cheese and pine nuts if using.
