- 2 tbsp olive oil
- 1 tbsp kosher salt
- 1 tbsp black pepper
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp dried thyme
Instructions
- Preheat oven to 450°F.
- Rub the roast with olive oil.
- Mix salt, pepper, garlic powder, onion powder, and thyme. Coat the roast evenly.
- Place roast bone-side down in a roasting pan.
- Roast for 15 minutes, then reduce heat to 325°F.
- Cook until internal temperature reaches 135°F for medium-rare (about 15-20 minutes per pound).
- Rest for 15 minutes before slicing.
