- 1 lb fresh okra
- 4 oz pepper jack cheese, cut into small sticks
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Vegetable oil for frying
Instructions
- Wash and dry the okra. Slit each okra lengthwise without cutting all the way through.
- Stuff each okra with a small stick of pepper jack cheese.
- Mix flour, salt, pepper, garlic powder, and paprika in a bowl.
- Dip stuffed okra in flour mixture, then beaten eggs, then breadcrumbs.
- Heat oil in a deep pan to 350°F (175°C).
- Fry okra in batches for 2-3 minutes until golden brown.
- Drain on paper towels and serve hot.

- Use fresh okra for best texture.
- Adjust cheese amount based on okra size.
- Serve with ranch or spicy mayo for dipping.
