Description
A delicious pecan upside down cake with a caramelized pecan topping and moist cake base.
Ingredients
Scale
- 1 cup chopped pecans
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C).
- Melt 1/2 cup butter in a 9-inch round cake pan. Sprinkle brown sugar evenly over the melted butter. Arrange chopped pecans on top.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat 1/2 cup softened butter and granulated sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
- Alternately add the flour mixture and milk to the butter mixture, starting and ending with the flour mixture.
- Pour the batter over the pecans in the cake pan. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool for 10 minutes, then invert it onto a serving plate.
Notes
- Ensure the pecans are evenly distributed for a consistent topping.
- Do not overmix the batter to keep the cake tender.
- Let the cake cool slightly before inverting to avoid breaking.
