  • 1 cup (200g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix until smooth.
  3. Add the egg and vanilla extract to the peanut butter mixture and stir until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Using a tablespoon, scoop out the dough and roll into balls. Place them on a baking sheet lined with parchment paper.
  7. Flatten each ball slightly with a fork, creating a crisscross pattern on top.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes
