- 4 cups cubed stale bread (preferably ciabatta or baguette)
- 2 ripe peaches, pitted and sliced
- 2 cups cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh basil leaves, torn
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cubed stale bread, sliced peaches, cherry tomatoes, red onion, and basil.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Let the salad sit for about 10-15 minutes to allow the bread to soak up the flavors.
- Serve immediately and enjoy!
Notes
- Feel free to add other vegetables like cucumbers or bell peppers for extra crunch.
