Ingredients

  • 4 cups crusty bread, cut into cubes
  • 2 ripe peaches, sliced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the bread cubes on a baking sheet and drizzle with 1 tablespoon of olive oil. Toss to coat and bake for 10-15 minutes until golden brown and crispy.
  3. In a large bowl, combine the sliced peaches, cherry tomatoes, red onion, and torn basil leaves.
  4. In a small bowl, whisk together the remaining olive oil, red wine vinegar, salt, and pepper.
  5. Add the toasted bread cubes to the bowl with the fruit and vegetable mixture, then drizzle the dressing over the top.
  6. Toss gently to combine and allow the salad to sit for about 10 minutes before serving to let the flavors meld.
