- 4 cups crusty bread, cut into cubes
- 2 ripe peaches, sliced
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves, torn
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Spread the bread cubes on a baking sheet and drizzle with 1 tablespoon of olive oil. Toss to coat and bake for 10-15 minutes until golden brown and crispy.
- In a large bowl, combine the sliced peaches, cherry tomatoes, red onion, and torn basil leaves.
- In a small bowl, whisk together the remaining olive oil, red wine vinegar, salt, and pepper.
- Add the toasted bread cubes to the bowl with the fruit and vegetable mixture, then drizzle the dressing over the top.
- Toss gently to combine and allow the salad to sit for about 10 minutes before serving to let the flavors meld.
