A delicious and refreshing pasta salad perfect for any gathering or as a side dish.
Ingredients

- 8 ounces of rotini or fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup bell pepper, diced
- 1 cup mozzarella balls or cubed cheese
- 1/4 cup olives, sliced
- 1/4 cup fresh basil, chopped
- 1/2 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, bell pepper, mozzarella, olives, and fresh basil.
- Pour the Italian dressing over the salad and toss to coat evenly.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
Notes
- Feel free to add your favorite vegetables or proteins such as grilled chicken or chickpeas.
- This salad can be made a day in advance for easy meal prep.
