Ingredients
Scale
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon vanilla extract (optional)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, melted butter, and vanilla extract. Stir until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
- Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook until golden brown on the other side, about 1-2 minutes more.
- Serve warm with your favorite toppings, such as syrup, fresh fruit, or whipped cream.
Notes
- For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
- You can add mix-ins like blueberries or chocolate chips to the batter if desired.
- Store leftover pancakes in an airtight container in the refrigerator for up to 3 days.
