Description

Ingredients

  • 2 cod fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 cup diced tomatoes
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup vegetable broth

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season cod fillets with salt and pepper.
  3. Sear cod for 3-4 minutes per side until golden. Remove and set aside.
  4. In the same skillet, sauté garlic until fragrant.
  5. Add diced tomatoes, basil, red pepper flakes, and vegetable broth. Simmer for 5 minutes.
  6. Return cod to the skillet and cook for 2 more minutes.
  7. Serve hot.
