Ingredients

  • 2 cod fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1/2 cup vegetable broth

  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season cod fillets with salt and pepper, then sear for 3-4 minutes per side until golden. Remove and set aside.
  3. In the same pan, sauté garlic for 30 seconds until fragrant.
  4. Add cherry tomatoes, vegetable broth, and oregano. Simmer for 5 minutes.
  5. Stir in fresh basil and return cod to the pan. Cook for 2 more minutes.
