Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes, bell peppers, and onion. Sauté until sweet potatoes are tender, about 10-15 minutes.
- Make small wells in the hash and crack an egg into each well.
- Cover the skillet and cook until the eggs are set to your liking.
- Season with salt and black pepper.
- Serve topped with sliced avocado and fresh herbs.
