- 1 lb ground turkey
- 1 cup diced bell peppers
- 1 cup diced onions
- 8 large eggs
- 1 cup almond milk
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup spinach, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground turkey until browned.
- Add bell peppers and onions. Sauté until soft.
- In a bowl, whisk together eggs, almond milk, garlic powder, salt, and pepper.
- Stir in the cooked turkey mixture and spinach.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes until set.
Notes
- Store leftovers in the refrigerator for up to 4 days.
- Feel free to add other vegetables.
- This can be made ahead of time and reheated.
