- 4 chicken thighs, bone-in and skin-on
- 4 chicken drumsticks
- 1 cup buttermilk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup breadcrumbs (preferably panko)
- 1/2 cup all-purpose flour
- Non-stick cooking spray
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the buttermilk, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
- Add the chicken pieces to the buttermilk mixture, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.
- In a separate shallow dish, combine the breadcrumbs and flour. Mix thoroughly.
- Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the breadcrumb mixture, pressing lightly to ensure an even coat.
- Place the coated chicken pieces on a baking sheet lined with parchment paper. Spray the tops lightly with non-stick cooking spray.
- Bake in the preheated oven for 40-45 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
