- 4 chicken thighs
- 4 medium potatoes, cut into wedges
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried thyme
Instructions
- Preheat your oven to 200°C (400°F).
- Toss potato wedges with 1 tbsp olive oil, salt, pepper, garlic powder, paprika, and thyme.
- Spread potatoes on a baking sheet in a single layer.
- Coat chicken thighs with the remaining olive oil and season with salt and pepper.
- Place chicken on the baking sheet with the potatoes.
- Bake for 40-45 minutes until chicken is cooked through and potatoes are crispy.
- Serve hot.
Notes
- Use bone-in, skin-on chicken for extra flavor.
- Check chicken doneness with a meat thermometer (internal temp should be 75°C/165°F).
- For crispier potatoes, flip halfway through baking.
